Avocado & Egg Tostada


  • 4 eggs

  • 2 tostadas

  • 1 1/2 avocados, mashed

  • 1 cup grape tomatoes, chopped

  • 1/4 cup yellow onion, chopped

  • 2 tbsp fresh parsley, chopped

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 tsp crushed red pepper flakes

  • salt & pepper


  1. Preheat oven to 400 degrees.

  2. Lay tostadas on a baking sheet, side by side and place in oven for about 5 minutes or until slightly crispy

  3. In a medium size skillet cook eggs per preference (I chose to do all sunny side up)

  4. While eggs are cooking, using a small bowl, mix together the tomato, yellow onion, garlic powder, red pepper flakes, oregano, parsley, salt & pepper, set aside

  5. Using another small bowl, mash the avocados and sprinkle with salt & pepper

  6. Once tostadas are done, remove from oven. Spread the avocado evenly on each tostada, top with the eggs and salsa
