Jalapeno Bacon Mac n' Cheese


  • 1 lb. large elbow noodles⁣

  • 1/2 lb. bacon (I used smoked applewood)⁣

  • 2 cups half & half⁣

  • 1 cup unsweetened almond milk⁣

  • 3 whole jalapeños, diced⁣

  • 3 tbsp butter⁣

  • 1 cup pepper jack cheese⁣

  • 1 cup sharp yellow cheddar cheese⁣

  • 1 cup mozzarella cheese⁣

  • 1/2 cup flour⁣

  • salt & pepper⁣ ⁣


  1. In a large pot of salted water, cook pasta per package instructions

  2. While pasta is cooking, chop bacon into bite size pieces and add to a skillet on medium heat, cook bacon until crispy, remove once done and set aside

  3. Drain only 1/2 of the bacon oil. Using the same pan with the bacon oil, add the butter and jalapeños, sauté for about 2 minutes until jalapeños have softened

  4. Add flour and whisk, then add in the half & half and almond milk, continue to whisk until all flour clumps are gone

  5. Add in the cheese, continuously stirring until melted. Once pasta is done, drain and add to the the cheese mixture⁣, toss to coat⁣

Note: If baking, add 1/2 cup panko breadcrumbs, 1/2 cup parmesan cheese and 1 tbsp melted butter to a small bowl, mix well. Add to the top of mac n cheese, bake at 350° for 20 minutes! ⁣
