Mediterranean Dip


  • 8 oz. hummus (I used roasted red pepper)

  • 1 tomato, diced

  • 1 whole cucumber, diced

  • 1/2 cup nonfat greek yogurt

  • 1 can artichoke hearts, chopped

  • 1 can roasted red peppers, chopped

  • 1/4 cup feta cheese, crumbled

  • 2 tbsp fresh parsley, roughly chopped

  • 1 tsp paprika

  • salt & pepper


  1. In a small - medium size serving dish, spread the hummus as the first layer on the bottom of the dish

  2. In a small bowl, mix together the tomatoes and cucumbers, then layer on top of the hummus

  3. Using a spoon, evenly spread the yogurt over the tomatoes and cucumbers, Sprinkle the paprika and salt & pepper over the yogurt

  4. Next, add the artichoke hearts, roasted red peppers and the feta cheese

  5. Top with fresh parsley
