Gingerbread Bites


  • 1 cup pitted dates

  • 2 cups chopped pecans

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1 tsp nutmeg

  • 1 cup dark chocolate (for the drizzle)

  • 1 tbsp coconut oil


1. Soak the pitted dates for about two hours in a bowl of warm water. Once you've hit two hours, drain the dates and set aside

2. Using a food processor, add the chopped pecans and pulse 3-4 times, add the dates and continue to pulse, then add the cinnamon, ginger, and nutmeg, by now a sticky dough should be formed

3. Roll the dough into small balls and place on a lined baking sheet with parchment paper

4. Once done, place the baking sheet in the refrigerator for about 30 minutes. In the meantime, melt the coconut oil with the dark chocolate, using a fork to drizzle the melted chocolate over the balls
