Spinach & Egg Breakfast Quesadilla
1 egg white
2 spinach wraps
1 tbsp unsweetened almond milk
1/2 cup mozzarella cheese
handful of spinach
1 tbsp hot sauce
1 tsp parsley flakes
salt & pepper
In a small bowl, whisk together the eggs and almond milk
Pour egg mixture into a small pan over medium heat and scramble for a few minutes until cooked
In a separate pan, place the wrap down. On one half of the wrap add the mozzarella cheese and spinach, let cook for 1-2 minutes, or until cheese is melted.
Add the egg mixture and hot sauce to the top, cover with the other half of the wrap and press down with a spatula to seal the quesadilla. Flip over to make sure both sides brown
Top with parsley flakes & avocado!
