Spinach & Egg Breakfast Quesadilla


  • 4 eggs

  • 1 egg white

  • 2 spinach wraps

  • 1 tbsp unsweetened almond milk

  • 1/2 cup mozzarella cheese

  • handful of spinach

  • 1 tbsp hot sauce

  • sliced avocado

  • 1 tsp parsley flakes

  • salt & pepper ⁣


  1. In a small bowl, whisk together the eggs and almond milk

  2. Pour egg mixture into a small pan over medium heat and scramble for a few minutes until cooked

  3. In a separate pan, place the wrap down. On one half of the wrap add the mozzarella cheese and spinach, let cook for 1-2 minutes, or until cheese is melted.

  4. Add the egg mixture and hot sauce to the top, cover with the other half of the wrap and press down with a spatula to seal the quesadilla. Flip over to make sure both sides brown

  5. Top with parsley flakes & avocado!
