Summer Corn Salad


  • 3 15oz. cans whole kernel corn (salt free), drained & rinsed

  • 10 oz container of fresh tomatoes, sliced in halves

  • 8 or 16 oz. fresh mozzarella, cut into bite size pieces

  • a bunch of fresh basil, roughly chopped


  • 1/4 cup olive oil

  • 1/4 cup fresh lemon juice

  • 1 garlic clove, minced

  • salt & pepper


  1. In a large bowl, mix together the corn, tomatoes, mozzarella and basil

  2. Using a mason jar with a lid, add the olive oil, lemon juice, garlic, salt and pepper to the jar, close with the lid and shake well

  3. Pour dressing over the salad and toss to combine
